Cooking at Home/Frugality etc.
I made scalloped potatoes for the first time today. Yum! I wish I could have taken a picture of this golden, cheesy, bubbly dish, but my camera is a wreck right now. I don't know how to get pics off my blackberry onto the computer so I didn't bother with that either. It was real tasty though!!! I served that with baked chicken and tossed salad. An overall simple meal, but very tasty!
I am really trying to do better at using up what we have at home and not do things like convenience meals, pizza, etc. First of all because we can't afford it and second of all it's just not healthy! I really want to help my husband to bring the finances in line and decrease unecessary spending. It is hard though sometimes when you've been busy, or working really hard and are tired. You just don't want to cook. Or maybe you feel like you've earned a night off in the kitchen. I need to look for ways to have special "treat" foods, and "take out" meals made at home. Maybe I'll buy those taco kits? Start making homemade pizzas and freeze them for nights when I can't or don't want to cook? I don't know. I'm open to suggestions though.
Time and again, I've said that I'd try to be more frugal, but my laziness and lack of motivation prevent me from following through. A website that has been helping me lately is Cindy's Porch. She promotes "shopping" from home first, before running out and buying whatever thing you feel you need. She also talks about procrastinating, but in a good way. Procrastinating on making purchases, that is. Not giving in to impulse buys and the "gotta-have-it-now" syndrome that affects many North Americans. So, yeah. I'm trying. I pray that God sees my heart and intentions and blesses my efforts. I also hope to bless my husband and family and show them that love is not about what we have or buy but, about being with each other and valuing our relationship and the time that we have with each other.
I don't know when I'll get my camera fixed. However here's a pic of me, my hubby and my son Samuel at his 2nd birthday a few weeks ago. My sister-in-law took the pic and emailed it to me.
